Turta - Italian Cheese Bread

Ingredients:

Directions:

  1. Dissolve yeast in 1/4 to 1/2 cup warm water.
  2. Allow to sit until it's time to use it.
  3. Sift flour onto board OR clean counter in a circle or well (I don' t sift it).
  4. Beat together the eggs, cheese and salt.
  5. Pour into the center of the well/circle.
  6. Add the lard to the circle.
  7. Mix lightly.
  8. Add yeast to the circle.
  9. Mix lightly again.
  10. Grease two 8 or 9 cast iron skillets well.
  11. Divide dough between the skillets.
  12. Cover skillets with dampt kitchen towels.
  13. Allow to rise as long as it takes until doubled in size.
  14. Bake for 45 minutes OR until tapping on bread makes a hollow sound.
  15. Remove from oven.
  16. Run a knife around the pan to loosen edges.
  17. Invert pans to remove breads.
  18. **According to my dad if the breads stuck in the pans, it was your fault.
  19. **I like to cut slices and allow them to get stale before eating it because it brings out the cheesiness!
  20. **OK, friends. Angst to tears.... time for a break.
