Ingredients:

  • 1 tsp cinnamon
  • 1 tsp clove
  • 1 tsp ginger
  • 1 cup firmly packed brown sugar
  • 1 1/8 cups grated carrots
  • 1/2 cup sultana
  • 2/3 cup olive oil
  • 2 eggs

Directions:

  1. Mix step one well.
  2. Beat step two.
  3. Add two steps together.
  4. Bake 180 degrees 40 - 50 minutes.
  5. Top with a cream cheese topping.
