Ingredients:

Directions:

  1. Line baking sheets with aluminum foil; lightly coat with nonstick cooking spray.
  2. Sift 1 cup confectioners sugar, cocoa, flour and salt into a bowl.
  3. Beat egg whites in bowl until foamy.
  4. Add remaining confectioners sugar and vanilla; beat 1 minute to soft peaks.
  5. Add sifted cocoa mixture; beat 1 minute, until well blended.
  6. Stir in pecans, chocolate and vanilla pieces.
  7. Drop by tablespoons onto prepared sheets, spacing 1 inch apart.
  8. Sift lightly with confectioners sugar if desired.
  9. Let stand for 30 minutes.
  10. Bake in 325 degree oven for 15 minutes or until cookie is puffed and crackled, but still soft in center.
  11. Cool on sheets 10 minutes.
  12. Remove to racks to cool.
  13. 2 1/2 dozen
