Ingredients:

  • 3/4 cup flour
  • 1/2 tsp baking soda
  • 1 cup packed brown sugar
  • 1 large egg
  • 1 tsp vanilla
  • 1/2 cup peanut butter
  • 1 cup raisins

Directions:

  1. Preheat oven to 375 degrees. Grease 2 cookie sheets.
  2. Combine flour and baking soda.
  3. In large bowl, cream shortening and sugar. Beat in peanut butter.
  4. Beat in egg and vanilla. Gradually blend in dry ingredients. Fold in chips, raisins, and peanuts.
  5. Drop dough by spoonfuls 1 1/2 inches apart on cookie sheets
  6. Bake 10-12 minutes
  7. When cookies are cool, wrap individually and store in airtight container.
  8. ; This time I added only a half cup chips, 1/2 cup oatmeal and 1 cup coconut.
  9. My husband is not a big fan of raisins so I usually add snipped dried fruit instead of raisins. I also sometimes add up to a 1/2 cups oatmeal to this. It depends on how thick the batter is.
