Tom's Favourite Oatmeal Cookies

Ingredients:

  • 1 cup raisins
  • 1 cup water
  • 3/4 cup shortening
  • 1 1/2 cups sugar
  • 2 eggs
  • 1 tsp vanilla
  • 2 1/2 cups flour
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp clove
  • 2 cups rolled oats

Directions:

  1. Simmer raisins and water until raisins are plump.
  2. Drain, reserve enough liquid to measure 1/2 cup.
  3. Mix thoroughly the shortening, sugar, eggs and vanilla.
  4. Add cooled liquid.
  5. Blend in dry ingredients, mixing well.
  6. Drop by teaspoon onto cookie sheet.
  7. Bake at 350° for 8- 10 minutes or until light brown.
