Tomato Basil Chicken Soup

Ingredients:

Directions:

  1. Grill onions & mushrooms in garlic and butter.
  2. Remove seeds and dice the fresh tomatoes.
  3. In a pot combine the diced tomatoes, onion & mushrooms, chicken stock, fresh basil, and the can of tomatoes (works great with the garlic oregano seasoned).
  4. Simmer for 15 minutes.
  5. Remove from heat and let it cool a little.
  6. While the soup is cooling, cube and cook the chicken.
  7. Once the soup is cooled, puree it in a blender or food processor to desired consistency.
  8. Return soup to the stove and add the chicken.
  9. Simmer for 10 minutes and add the cream right before you remove it from the stove.
