Tofu Spinach Lasagna

Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Boil water. Blanch spinach 1 minute Remove and drain.
  3. Add salt and olive oil to water. Add pasta. When done, lay flat.
  4. Saute onions and garlic in olive oil for 1 minute.
  5. Chop spinach and add to onion.
  6. Mix in rest of ingredients except cheese.
  7. Lightly oil 9x13 baking dish. Line bottom with layer of pasta. Spread 1/3 sauce and sprinkle cheese. Add another layer of pasta. Spread 1/2 of sauce and sprinkle cheese. Add another layer of pasta. Spread the rest of the sauce. Sprinkle rest of cheese on top.
  8. Cover with foil, bake 20 minute Remove foil, bake 15 minute.
