  1. Pre-heat the oven to a temperature of 400'. Oil the oven dish, place the sausages in it and put them into the oven.
  2. To make the batter in which the sausages - or toads - will wallow, tip flour into a mixing bowl and add salt and seasoning to taste.
  3. Now make a well in the flour and crack the 2 eggs into the bottom. Whisk the eggs into the flour, then carry on whilst slowly adding the milk, all the while being careful that no lumps appear. At the end, the mixture should be thick and smooth.
  4. Back to the sausages. After 10 minutes of roasting, your toads will be nice and brown. Take the oven dish out, and pour the batter over them.
  5. Now put the sausage and batter back in the oven for 20 minutes.
  6. If everything's gone according to plan, the batter will have risen nicely around the sausages. Only then does this dish deserve its name… because if the batter does not rise, Toad in the Hole becomes another dish entirely: Frog in the Bog.
