Ingredients:

  • crust
  • 1 cup butter
  • 2 cups flour
  • filling
  • 1 cup brown sugar , packed
  • 3 egg yolks , don'tsp toss the whites you need them
  • 1/2 cup milk
  • 1 tsp vanilla
  • 2 cups raisins
  • 3/4 cup flour
  • topping
  • 2 cups coconut
  • 1 tsp vanilla

Directions:

  1. Stir butter, flour and icing sugar together and press into a foil 9x13 pan.
  2. Bake for 10 minutes at 350 degrees. While it's baking prepare your filling.
  3. Measure all of your filling ingredients into a bowl and mix well. Pour it over the crust and continue to bake for 20-25 minutes.
  4. Stir all the topping ingredients together and spread it over the raisin layer. Return to oven for 15 minutes.
  5. Turn broiler on to brown the coconut. But watch very carefully as it will burn very easily!
  6. Cool on wire rack.
  7. Lift out of pan using foil and cut into squares.
  8. Enjoy!
  9. I always line my pans with foil when I make bars and brownies etc. That way when the product is cooled, you can lift it out and it's much easier to cut using a large, long bladed knife resulting in much neater squares!
