Thimble Cookies (Christmas Cookies)

Ingredients:

  • 1 lb butter
  • 4 eggs
  • 2 tsp vanilla
  • 4 cups flour
  • 1 cup walnuts
  • jam or jelly

Directions:

  1. Mix flour and sugar together; add vanilla, egg yolks and butter.
  2. Mix well; roll into a large ball.
  3. Save the egg whites in a small bowl.
  4. Crush the walnuts as fine as you can.
  5. Roll dough into small balls (about a heaping tablespoon full.
  6. Roll these small balls in the egg whites.
  7. Then roll them in the crushed walnuts.
  8. Place on greased cookie sheet.
  9. Poke a hole in the middle about half way through with a thimble, or something around the same size.
  10. Place in the oven at 350°F for 7 minutes, then repoke the hole.
  11. Place back in the oven for 7 more minutes or until golden brown.
  12. Then fill in the hole with jam or jelly.
  13. Let cool.
