Thick Potato and Bacon Soup

Ingredients:

  • 2 slices streaky bacon
  • 1 oz butter
  • 1 lb potato
  • 1 lb onion
  • 1 tsp salt
  • 1 tsp pepper

Directions:

  1. Peel and cut potatoes and onions coarsely.
  2. Chop Bacon and fry.
  3. In a stock pot/soup pan add potatoes, onions and butter and slowly cook with a lid on until they start to go soft.
  4. Add bacon, stock and season with salt and pepper.
  5. Cook for approximately 25 minutes.
  6. Once cooked use a blender until the soup takes on a relatively smooth consistancy.
