Ingredients:

Directions:

  1. Cook sweet potatoes on high in microwave for 15 minutes.
  2. Remove sweet potato from jackets and mash with butter. Set aside.
  3. While potatoes are cooking, brown ground turkey.
  4. Add onions, poultry seasoning, salt and pepper. Mix thoroughly.
  5. Add chicken soup and water to turkey. Mix thoroughly and then simmer for 5 minutes.
  6. Place turkey mixture in 9 x 13 baking dish.
  7. Spread mixed vegetables on top of turkey mixture.
  8. While turkey mixture is simmering, boil chicken broth and then add stuffing mix, cooking according to package directions.
  9. Place stuffing on top of vegetables.
  10. Place sweet potatoes on top of stuffing.
  11. Bake 350 for 30 minutes.
