Tempt Me Green Tomato Pie

Ingredients:

  • 6 medium green tomatoes
  • 1 cup sugar
  • 3 tbsp flour
  • 1-1/4 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/8 tsp ground cloves
  • 1-1/2 tsp lemon zest
  • 1/2 tsp salt

Directions:

  1. Preheat oven to 400.
  2. Blanch tomatoes in boiling water for 20 seconds.
  3. Remove from water then core and peel.
  4. Cut tomatoes into 1/4 slices.
  5. In large saucepan combine tomatoes with 1/4 cup water.
  6. Bring to a boil then cover and reduce heat and simmer 5 minutes.
  7. Remove tomatoes from liquid with a slotted spoon reserving boiling liquid.
  8. Combine flour, sugar, salt, cinnamon, nutmeg, cloves and lemon zest.
  9. Add flour mixture to liquid.
  10. Cook stirring constantly just until boiling.
  11. Remove from heat and stir in butter until melted.
  12. Gently stir in prepared green tomato slices.
  13. Cool slightly for 15 minutes and spoon into unbaked pie crust.
  14. Top with top pastry crust then crimp and seal edges.
  15. Cut slits in tops and sprinkle lightly with sugar and bake for 40 minutes.
