Tart Apricot and Pineapple Jam

Ingredients:

Directions:

  1. Simmer apricots in enough water to cover until they are soft enough to be mashed.
  2. Add pineapple and lemon. Simmer, stirring frequently, until the mixture.
  3. Is thick and the pineapple chunks are clear. Add juice while simmering.
  4. Pour into prepared jars leaving a 1/4 headspace. Process in a boiling water bath for 10 minutes. Adjust time according to your altitude.
  5. Makes: 10 half pints.
