Taku Glacier Lodge Ginger Cookies

Ingredients:

  • 1 cup butter
  • 1 3/4 cups granulated sugar
  • 3/4 cup brown sugar
  • 1 egg
  • 1/3 cup molasses
  • 2 3/4 cups all-purpose flour
  • 1 1/4 tsp baking soda
  • 1 tbsp cinnamon
  • 1 tbsp ground ginger , plus
  • 1 tsp clove
  • 2 tsp nutmeg
  • 1/2 tsp salt

Directions:

  1. Space oven racks evenly; preheat oven to 350 degrees.
  2. Cream butter and sugars together until fluffy.
  3. Beat in eggs and molasses.
  4. Mix flour, baking soda, spices and salt; add to above, just until blended.
  5. Using a small ice cream scoop, form walnut sized dough and dip into raw sugar; place on ungreased cookie sheet with sugar side up.
  6. Bake 10-12 minutes for softer cookies, longer for crispier cookies; cookies will crack on top.
  7. Excellent served warm!
