Sweet Potato Rosemary Cheese Bites

Ingredients:

Directions:

  1. Toss the sweet potato chunks in olive oil and sea salt and roast in a single layer for 25-35 minutes at 400 degrees F until lightly browned and fork tender.
  2. Remove and mash, then mix in rosemary and goats cheese and sea salt to taste.
  3. Form into small balls and saute in a little olive oil until lightly browned on the outside.
  4. Serve warm.
