Ingredients:

  • 1 large can sweet potatoes
  • 3/4 cup. brown sugar
  • 1/2 stick butter

Directions:

  1. Drain sweet potatoes.
  2. Add brown sugar and butter.
  3. Mash with fork till mixed well..
  4. Wrap large marshmallow to form a ball.
  5. Roll in coconut.
  6. Place in baking dish (ungreased) and bake in 375 degree oven till coconut is toasted.
