Sweet Onion & Sour Cream Potato Au Gratin

Ingredients:

Directions:

  1. Preheat oven to 350 degrees.
  2. Bring 3 quarts of water and 2 tablespoons salt to a boil.
  3. Coat a 9 X 13 baking pan with pan spray.
  4. Cut the red bliss potatoes into 1/4 inch slices.
  5. Blanch in boiling water for 5 minutes.
  6. Strain well.
  7. Cool in cold water; drain again.
  8. Place dry potatoes in bowl.
  9. Toss with olive oil and salt and pepper to taste.
  10. Mix together the sour cream, scallions, milk and onion soup mix.
  11. Add to the potatoes and toss to coat.
  12. Layer in prepared pan.
  13. Sprinkle the top with the bread crumbs and Parmesan cheese.
  14. Lightly spray with cooking spray.
  15. Bake for 30 minutes.
  16. Note: To reheat, pour 1/4 cup sour cream and 1/4 cup of Hood 1% Lowfat Milk over the top.
