Sweet and Sour Hasenpfeffer

Ingredients:

  • 1 quart vinegar
  • 2 tbsp salt
  • 1 tbsp peppercorn
  • 2 tbsp fat
  • 2 tbsp flour
  • 1 cup cold water
  • 1 tsp cinnamon
  • 1/2 tsp allspice

Directions:

  1. Cut rabbit into serving portions.
  2. Place in slow cooker and cover with vinegar combined with salt, spices, peppercorns, and 1 onion.
  3. Let stand in a cool place for 24 hours.
  4. Drain, cover with boiling water and simmer until tender (about 1 1/2 hours).
  5. Melt fat in frying pan, blend in flour and add water, stirring constantly.
  6. Cook until thickened.
  7. Add rabbit, strained broth, cinnamon, allspice and remaining onion and simmer for 1 hour.
