Swedish Mayonnaise

Ingredients:

  • 2 tbsp butter
  • 2 tbsp flour
  • 1 cup water
  • 2 tsp salt
  • 1 tbsp vinegar
  • 2 tbsp salad oil
  • 1/2 cup heavy cream
  • 1 pinch of sugar and pepper

Directions:

  1. Melt butter. Add flour until you have a paste. Add water and cook until thickened.
  2. Add egg yolks and dry ingredients and beat thoroughly.
  3. Add lemon juice, vinegar, and oil, gradually, mixing as you go.
  4. Whip cream and fold inches.
