Ingredients:

Directions:

  1. Preheat oven to 400F. Bake potatoes until tender, then cut in half. Scoop out insides of potatoes, place pulp in mixing bowl, reserve skins. In medium saucepan, add 2 Tbl margarine, onion, and bell pepper - saute until tender. Add tomatoes, simmer 2 minutes, and set aside. Combine potato pulp, milk, salt and pepper, and cajun seasoning, fold in veggie mixture. Place potato shells on baking sheet, and spoon potato mixture evenly into them. Dot with remaining margarine, sprinkle with paprika, and bake at 400F for 20 minutes. Remove from oven, sprinkle with shredded cheddar, if desired, and serve immediately. /
