Super Sweet And Creamy Pumpkin Soup

Ingredients:

  • 1 kg of richly coloured butternut pumpkin
  • 1 tbsp sugar
  • 2 tsp salt
  • 1 tbsp butter
  • 1/2 cup- 3/4 cup cream

Directions:

  1. Peel pumpkin and cut into pieces. Peel and chop onion.
  2. Place both in a large saucepan, add stock, sugar, salt, pepper and butter and cook until soft.
  3. Cool then place in a blender until smooth.
  4. Lastly add the cream and mix well (add more seasoning if needed).
  5. Heat but do not boil, serve immediately.
  6. Garnish with chopped parsley or nutmeg.
  7. ENJOY... I KNOW YOU WILL!!
