 Sunny Boy  Coffee Cake With Caramel Topping

Ingredients:

  • 1 1/4 cups boiling water
  • 1/2 cup butter
  • 3/4 cup white sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 1 1/3 cups flour
  • 1 tsp salt
  • 1 tsp vanilla
  • 1/2 cup melted butter
  • 1 eggs or 2 egg
  • 1 cup coconut
  • 1 tsp vanilla

Directions:

  1. Pour boiling water over Sunny Boy cereal and stir to blend; let cool.
  2. In a large mixing bowl, cream sugar, butter and eggs.
  3. Add vanilla, Sunny Boy cereal mixture and dry ingredients.
  4. Beat well and put into a greased 9 x 13 inch pan.
  5. Bake at 375 degF for about 30 minutes or till done.
  6. While cake is baking prepare the topping by mixing tog the melted butter, brown sugar and egg, beating it well.
  7. Add the coconut and vanilla.
  8. Spread this topping over hot cake and return to the oven for about 10 more minutes.
