Summer Raspberry Dressing

Ingredients:

  • 2/3 cup confectioners' sugar
  • 1/3 cup olive oil

Directions:

  1. Beat first three ingredients together in a medium bowl.
  2. Rinse raspberries and add them to the bowl.
  3. Mash the raspberries then whisk everything together.
  4. Enjoy!
  5. As a side note, I used this on a salad that consisted of just spinach, sliced almonds, and fresh raspberries. DH loved it.
