Ingredients:

Directions:

  1. Cut the Acorn Squash in half lengthwise. Remove the seeds. Place the squash cavity side down on a shallow micro wave dish. Cover the squash with plastic wrap. Poke several holes in the plastic wrap to vent stem.
  2. Place in microwave on high for 15 minutes.
  3. While the squash is cooking, saute Italian sausage. If the sausage was purchased in link form, remove from casing and mix with onions. Saute until it is done but not browned, drain it.
  4. When the squash is done, carefully remove plastic wrap and place the squash cavity side up in a bowl so that it doesn't rock around. Salt & pepper to taste and file the cavity with the sausage onion mixture.
  5. Serve hot.
