Strawberries And Matcha Roll

Ingredients:

  • for the matcha cream
  • 500 ml milk
  • 50 g. flour
  • 50 g. butter
  • 10 g. matcha tea
  • for the biscuit/base
  • 50 g. sugar
  • 30 g. sugar
  • 60 g. flour sifted
  • 2 tbsp. cointreau liquor

Directions:

  1. Prepare the biscuit.
  2. Preheat the oven at 170 C.
  3. Beat the egg yolks with 50 gr. sugar until they are whitish.
  4. Separately beat the egg whites with 30 gr. sugar until they are a thick meringue.
  5. Take half of the meringue quantity and fold it carefully into the egg yolks mixture.
  6. Sift carefully the flour over the mixture stirring smoothly.
  7. Add the rest of the meringue.
  8. Spread the mixture on a oblong shaped oven dish that you have covered with non-stick paper.
  9. Bake for 12 minutes until it is golden yellow.
  10. Take it out of the oven and let it cool.
  11. Turn it upside down on a wet towel and unstick it carefully.
  12. Then prepare the pastry cream.
  13. Heat the milk in a pan stirring the matcha powder in.
  14. Beat the egg yolks with the sugar until they become whitish and sift the flour over them stirring carefully.
  15. Pour the mixture in the milk stirring constantly until it comes to a boil. When it starts boiling remove from the heat, pour the liquid in a bowl and add the butter in small pieces beating vigorously.
  16. Put the cream in the refrigerator to thicken for at least 2-3 hours.
  17. Brush the biscuit with the liquor.
  18. Spread the cream on top and cover with the strawberry slices.
  19. Sprinkle with 2 tbs of confectioners sugar and roll it like a loaf.
  20. Cover with plastic wrap and keep it in the fridge until before ready to serve. You can prepare it one day ahead and garnish it the next day.
  21. Brush the roll with the strawberry jam, sprinkle with the remaining sugar and garnish with some strawberry slices.
