Ingredients:

Directions:

  1. Sift the flour, salt, mustard and cayenne pepper into a bowl.
  2. Rub the butter into the flour until the mixture resembles fine breadcrumbs.
  3. Mix in the grated cheese.
  4. Add the milk all at once.
  5. Mix to a soft, but not sticky, dough with a knife.
  6. Turn onto a lightly floured surface.
  7. Knead quickly until smooth.
  8. Roll out to about 1/2-inch thickness.
  9. Cut into 7 or 8 rounds with a 21/2-inch round cutter.
  10. Transfer to a baking sheet.
  11. Brush the tops with milk.
  12. Bake at 450°F for 7-10 minutes or until well risen and golden.
  13. Cool on a wire cooling rack.
