Ingredients:

Directions:

  1. Rinse peas. Cook in the 3 cups water (45 minutes).
  2. Sauté onion and garlic in the olive oil. Add spices and sauté for 5-10 more minutes. Set aside.
  3. When peas are cooked, stir in onion mixture and vegetable stock. Add lemon juice and rice. Season with salt and pepper. Serve topped with the fresh parsley.
