Ingredients:

  1. Grill the smoked sausage, drain
  2. Get out your crock pot and pour in the chicken broth.
  3. Add the celery, garlic, onion and curry
  4. Halve then slice the cooked sausage
  5. Pour in the dried mung beans
  6. Add seasonings, close the lid and walk away for few hours.
  7. I found that the mung beans were soaking up more liquid than I assumed it would. This made it into more of a stew than a soup so I added two cups of water after about an hour to thin it down.
  8. Notes:
  9. I used the Gadjar Raita Kari because it was leftover and needed some more loving. You can simply use a cup of sliced carrots then add some curry spices. The Gadjar Raita Kari has pineapple in it which will really add a sweet flavor to the soup.
