Spinach With Chicken and Rice (Dutch)

Ingredients:

Directions:

  1. Thaw and drain the spinach.
  2. Cook the rice according to package directions.
  3. Peel and chop the shallot and the garlic.
  4. Rinse and slice the mushrooms and tomatoes.
  5. Dice the chicken breasts and season them with salt and pepper.
  6. Chop the salami or chorizo.
  7. Heat 2 Tbsp of oil in a skillet and saute the shallot and garlic. Turn down the heat, add the spinach and cook for 8 minutes on low.
  8. Heat the remaining 3 Tbsp of the olive oil in another big skillet or wok and saute the chicken about 5 minutes.
  9. Add the salami or chorizo and mushrooms and fry for another 3 minutes.
  10. Add the cooked rice and spinach and mix well.
  11. Salt and pepper to taste.
  12. Top with slices of tomato and serve.
