Spinach Stuffed Tomatoes

Ingredients:

Directions:

  1. Preheat oven to 350
  2. Cut 1/2 inch slice from top of each tomato
  3. Scoop out pulp, leaving shell intact
  4. Salt shell and turn upside down to let moisture drain for 10 minutes
  5. In mixing bowl, combine spinach, 1/2 cup cheese and pepper
  6. Fill each tomato with spinach mixture
  7. Sprinkle remaining cheese over top
  8. Place tomatoes in muffin tin
  9. Bake 25 minutes
