Spinach & Meat Lasagne

Ingredients:

Directions:

  1. In a Large bowl mix 1lb Ricotta cheese, chopped spinach, 1/4 Cup onion finely chopped and sauteed, 1 cup mozzarella cheese grated, 1/2 Cup parmesan cheese until well blended.
  2. Blend flour with evaporated milk and add to spinach cheese mixture.
  3. Mix thoroughly.
  4. Mix in nutmeg and pepper.
  5. Set aside.
  6. In large pot (dutch oven) brown meats.
  7. Line a colander with papertowel and transfer meat to drain fat.
  8. Saute mushrooms and onions in a little olive oil.
  9. Add rest of ingredients including meat plus 1 cup of water and simmer 1 hour.
  10. Spray a 9 x 13 pan with cooking spray.
  11. Put a generousl ladle of sauce in bottom of pan.
  12. Cover with a thin layer of grated mozzarella cheese.
  13. Arrange 3 noodles on top.
  14. Spread 1/2 spinach cheese mixture over noodles.
  15. Arrange 3 noodles on top.
  16. Cover with a layer of sauce and a light covering of Mozzarella cheese.
  17. Cover with 3 noodles.
  18. Spread rest of spinach cheese mixture over noodles.
  19. Cover with 3 noodles.
  20. Finish with a layer of meat sauce.
  21. Cover with foil and bake 45 minIn 350F oven.
  22. Remove foil and cover top with rest of cheese.
  23. Return to oven for 15 - 20 min till golden.
  24. Let stand on counter 10 min before cutting.
