Spinach, Feta and Roasted Tomato Omellette

Ingredients:

  • 1 egg
  • 1 tbsp olive oil

Directions:

  1. Wrap a tomato with foil and put in oven or toaster oven at 350º for at 1-1 1/4 hr
  2. Thaw the frozen spinach and strain all liquid
  3. Beat egg and egg whites(or just do egg whites) and add to oild non-stick pan
  4. When egg if somewhat firm all rest of ingredients
