Spinach and Egg Sauté

Ingredients:

  • 3 oz spinach
  • 1/2 tbsp soy sauce
  • 1/2 tbsp sake

Directions:

  1. Blanche spinach in boiling salted water. Squeeze out the water and chop. Stir the salt and pepper into the beaten egg.
  2. With 1/2 T oil in the pan, make a small omelet with the egg. Remove.
  3. Add the remaining oil to the pan. Stir in the spinach. Add the soy sauce and sake.
