Spicy Tomato Chicken

Ingredients:

Directions:

  1. Mix togather the seasoned flour and chilli powder. Use to coat the chicken thighs. Set aside remaining seasoned flour.
  2. Heat the oil in a large frying pan with a lid.
  3. Add chicken and fry over a medium-high heat for 8-10 mins, turning once until browned all over. Transfer to a plate.
  4. Add the onion to the pan and cook for 5-6 mins, stirring until softened.
  5. Sprinkle in the reserved seasoned flour and cook for 1 min stirring continuously.
  6. Add broth, garlic and tomato paste.
  7. Return chicken to the pan and bring to the boil.
  8. Scatter over zucchini and tomatoes.
  9. Stir, cover and simmer for 15-20 minutes.
  10. Serve with mashed pototoes to sop up the sauce!
