Spicy Tomato and White Bean Soup

Ingredients:

  • 1/2 onion
  • 5 tbsp raw shallot
  • 2 garlic clove
  • 1 pint cherry tomatoes
  • 1/2 cup cilantro
  • 1 tsp cumin
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1/2 tsp salt

Directions:

  1. Combine 1 cup broth, chili powder, cumin and cooked white beans in dutch oven over med-high heat
  2. Combine 1 cup broth, chili, onion, shallot in food processor
  3. Pulse until chopped
  4. Add onion mixture to soup pot
  5. Put tomatoes and cilantro in food processor
  6. Chop coursley
  7. Add to soup pot
  8. Bring to boil
  9. Cover, reduce heat and simmer five minutes until vegetables are tender
  10. Remove from heat stir in olive oli, salt, lime juice
  11. Garnish with cilantro if desired
