Spicy Pumpkin Bars With Cream Cheese Frosting

Ingredients:

  • 2 cups flour
  • 1 1/4 tsp cinnamon
  • 1 1/4 tsp nutmeg
  • 1 1/4 tsp ginger
  • 1/2 tsp salt
  • 1/2 cup shortening
  • 1/4 cup sugar
  • 4 eggs
  • 1 (8 oz) package cream cheese, softened
  • 1 tbsp margarine or 1 tbsp butter
  • 2 1/2 cups powdered sugar
  • 1 tbsp milk
  • 1 tsp vanilla

Directions:

  1. Heat oven to 350 degrees.
  2. Grease a 15 1/2 x 10 1/2 jelly roll pan.
  3. SIft together flour, baking powder, cinnamon, nutmeg, ginger and salt. Set aside.
  4. Cream the shortening, brown sugar and sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Then beat in pumpkin.
  5. Gradually stir in dry ingredients.
  6. Spread in greased pan. Bake for 30 minutes.
  7. Cool in pan.
  8. When bars are cool, eat icing ingredients together and frost.
