Ingredients:

  • 1 1/2 cups brown sugar , packed
  • 1/2 cup shortening
  • 2 eggs
  • 16 oz pumpkin
  • 2 3/4 cups flour
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/2 tsp salt
  • 1 cup raisins

Directions:

  1. Preheat oven to 400 degrees. Mix sugar, shortening, eggs and pumpkin throughly in a large bowl. Sift dry ingredients and add to pumpkin mixture. Blend all well and add raisins. Pour batter into springform pan lightly sprayed with cooking oil.
  2. Bake 35 minutes or until the center springs back and edges begin to pull away from pan. Remove from oven and cool before unmolding.
