Spicy Lentil And Leek Soup

Ingredients:

  • 2 cups of green (preferrable) lentils soaked overnight and cooked until tender
  • 1 large leek sliced finely
  • large knob of butter
  • 3 cloves of garlic, chopped
  • 1/1.2 ltr of good chicken stock
  • some cream or yogurt (few tbsp)
  • salt and pepper

Directions:

  1. Sweat the leek and garlic with the butter and cayenne until soft
  2. Add the cooked lentils and stock on a low heat until boiling
  3. Remove half the mixture and blend and add back into the pot
  4. Salt and pepper to taste and serve with chopped parsley and a little swirl of cream or yogurt and some bread
