Spicy Blackberry Vinegar

Ingredients:

  • 2 cinnamon sticks
  • 2 tsp allspice berries
  • 2 tsp whole cloves
  • 2 1/3 cups vinegar
  • 2 cups sugar

Directions:

  1. Break the cinnamon sticks into pieces.
  2. Put all the spices on a square of cheesecloth and tie up with a piece of string.
  3. Put the vinegar and sugar into a large saucepan.
  4. Stir over low heat, until the sugar has completely dissolved.
  5. Add the spice bag.
  6. Bring to a boil, lower heat, and simmer for 5 minutes.
  7. Add the blackberries and simmer for 10 minutes longer.
  8. Remove from heat and leave the blackberry mixture to cool completely.
  9. Discard the spice bag.
  10. Line a funnel with a double layer of cheesecloth.
  11. Strain flavored vinegar into sterilized bottles (within 1/8-inch of the tops).
  12. Add fresh blackberries to each bottle.
  13. Seal the bottle and label.
  14. The vinegar is now ready to use.
