Spiced Noodle Crunchies

Ingredients:

Directions:

  1. Roughly break up noodles and pour over enough boiling water to soak for 4-5min.
  2. Drain and rinse under cold water
  3. Dry on kitchen paper
  4. Mix noodles well with all the spices, omitting the dipping sauce
  5. Heat oil in wok
  6. Using a tablespoon drop batches of noodles into the hot oil
  7. Flatten with skimmer, cook for 1-2 min on each side until crisp
  8. Drain on kitchen towel
  9. Serve with sweet chili sauce
