Ingredients:

  • since this did not come out for 1 person, i have deleted the recipe. i wouldn'tsp want anyone else to have such a time. thanks for your interest.
  • i put several recipes from the net on here. you will notice that they all have a lot of butter compared to the flour, gee i wonder if that is why it is shortbread and not bread or cake
  • 100 g sugar
  • 100 g butter
  • 1/2 cup cornstarch
  • 1/2 cup icing sugar
  • 1/2 cup confectioners' sugar
  • 1 1/2 cups flour
  • 1/2 tsp. lemon extract
  • 1/2 cup caster sugar
  • 2 cups plain flour , sifted
  • 150 g spelt flour 6oz
  • 75 g butter 3oz
  • 100 g pine kernels 4oz
  • 100 g runny honey 4oz
  • 1 egg

Directions:

  1. Cream together the sugar and butter until light and fluffy.
  2. Work in the flour and lemon rind.
  3. Press the dough into a 8 inch round pan
  4. Cut dough into slices and prick the surface with a fork.
  5. Bake in an oven preheated to 350* for 30 minutes.
  6. Remove from oven and slice again before the shortbread is cold.
