Ingredients:

Directions:

  1. 6-8 small zucchini squash
  2. Diced white onion
  3. Cheddar cheese
  4. Fresh tomatoes
  5. Salt n' pepper to taste
  6. Flour
  7. Crisco
  8. Slice squash, salt n' pepper, roll in flour, brown in skillet
  9. Add cut up onion and brown with squash
  10. Add tomatoes
  11. Add cheese ( add enough cheese to make it tasty, use your own judgment)
  12. Preheat oven to 375
  13. Place all ingredients into a Pam sprayed dish (square works nicely)
  14. Cook 20-30 minutes or until cheese is melted and top is browned some
  15. Serve in the dish it was baked in .. very good
  16. Note: you can use a can of diced tomatoes if you wish. I have added green chilies and fresh garlic too . . . it’s also very good.
