Spaghetti Squash Hash - 1 Cup

Ingredients:

  • 5 cloves garlic, minced
  • 411 14.5 oz. can tomatoes
  • 4 cups baby spinach
  • 2 1/2 cups spaghetti squash
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp basil

Directions:

  1. Cook minced garlic in water in skillet.
  2. Add tomatoes (14.5 oz. can diced tomatoes). Reduce mixture a little bit.
  3. Add 4 cups baby spinach. Cover until cooked - maybe 2 minutes. Break the spinach apart.
  4. Add the spaghetti squash a little at a time, stirring after each addition.
  5. Season to taste with salt, pepper, and basil.
