Southern Fried Okra

Ingredients:

  • 1 lb fresh okra, cut into 1/2 inch thick slices (discard the tips and stem ends)
  • 2 cups buttermilk
  • 3/4 tsp salt
  • crisco for frying
  • 1/4 cup bacon drippings

Directions:

  1. In bowl, place okra, stirring in buttermilk gently
  2. Cover, chill for about 40 minutes
  3. In large bowl, combine cornmeal, flour, salt and pepper, whisk
  4. Remove okra from buttermilk with slotted spoon, discarding buttermilk
  5. Dredge okra in batches in the cornmeal mixture
  6. Spoon Crisco into a Dutch oven or a cast iron skillet (when melted it needs to be about 2 inches depth)
  7. Add bacon drippings
  8. Heat on med high or until about 375 degrees
  9. Fry okra in batches for about 4 minutes or until golden
  10. Drain on paper towels
