Sopapillas (Fried Biscuit Puffs)

Ingredients:

  • 1/2 tsp salt
  • 175 ml luke water
  • fat (for frying)
  • 1/4 tsp cinnamon

Directions:

  1. Stir together the first three ingredients.
  2. Rub the shortening into the flour until it resembles fine bread crumbs.
  3. Gradually add the water.
  4. Stir with a fork until it becomes a crumbly dough.
  5. Turn onto a floured surface.
  6. Knead into a smooth ball, divide the dough in half.
  7. Allow to stand for 10 minutes.
  8. Divide into two.
  9. Roll each half into a rectangle.
  10. Using a medium pastry cutter, cut into runds.
  11. Do NOT re-roll or patch dough.
  12. Fry a few at a time in deep hot fat 200 C, 400 F, Gas mark 6 till golden.
  13. Drain on a paper towel.
  14. Serve with honey or roll in icing sugar and cinnamon.
