Ingredients:

Directions:

  1. Cut tortillas in strips about 3 inches long and 1/2 inch wide.
  2. In medium skillet heat 1/4 inch of oil.
  3. Fry tortilla strips, a few at a time, about 10 seconds or just until limp.
  4. Remove with slotted spoon.
  5. Drain on paper toweling.
  6. Pour off all but about 2 tablespoons oil from skillet.
  7. Add green pepper strips, onion and garlic; cook till onion is tender.
  8. Sprinkle vegetables with salt.
  9. In 1-1/2 quart casserole, combine tortilla strips, vegetables, and half of the cheese.
  10. Pour whipping cream over all.
  11. Cover and bake in 350-degree oven for 20 minutes.
  12. Uncover.
  13. Stir gently; sprinkle with remaining cheese.
  14. Bake uncovered about 10 minutes more or until heated through.
