Soft & Spicy Gingersnap Cookies

Ingredients:

  • 2 1/2 cups flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp ginger
  • 1 tbsp allspice
  • 1 tbsp clove
  • 1 1/4 cups dark brown sugar
  • 1/4 cup sugar
  • 1 egg
  • 1/4 cup molasses

Directions:

  1. Preheat oven to 300°F.
  2. Sift together the flour, baking soda, ginger, allspice, and cloves.
  3. In another bowl cream together the sugars and butter
  4. Add egg, molasses and crystallized ginger and beat at medium speed for 2 minutes.
  5. Add the flour mixture to the wet ingredients and mix until just blended.
  6. Cover dough and chill for at least 30 minutes.
  7. Lightly spray baking sheet with cooking spray.
  8. Spoon balls of dough and roll in sugar.
  9. Bake for 20 minutes.
  10. Transfer cookies to another surface to cool.
