So Chewy Oat Squares

Ingredients:

  • 2 cups oats
  • 2 cups nonfat milk
  • 2 eggs (or 4 egg whites, or egg
  • 1/8 tsp nutmeg (optional)
  • 1/4 tsp cinnamon (optional)
  • 1/4 tsp salt
  • 2 tbsp honey (or 1 tbsp with 1 tbsp. sugar free maple syrup)
  • 1/2 cup dried cherries (optional)

Directions:

  1. Preheat oven to 375 degrees Fahrenheit (190 Celsius) and gently cover an 8x8 baking pan or dish with light cooking spray.
  2. Combine all ingredients well in a mixing bowl, adding oats first, then eggs, spices, milk, honey/maple syrup and finally the add-ins.
  3. Press mixture into the pan and bake for 30 minutes, or until oatmeal is golden brown.
  4. (you can also add in 1/2 cup chopped nuts or 1/4 cup chocolate chips if desired).
