Ingredients:

  • 7 2/3 cups flaked coconut
  • 1 cup flour
  • 1/2 tsp salt
  • 1-14 oz. can eagle brand
  • 1 1/2 tsp vanilla extract
  • 1 1/2 tsp almond extract

Directions:

  1. Line cookie sheet with foil.
  2. Sprinkle 1 cup coconut over foil,bake in 350 degree oven for about 5 to 6 minutes,stirring often until a beautiful golden brown,cool.
  3. Leave the foil on the sheet.
  4. Mix toasted coconut,and remaining coconut,flour,salt in a bowl.
  5. Beat milk,cream of coconut,vanilla,almond extracts and egg,with spoon until you are pleased with the mix.
  6. Pour milk mixture over coconut mixture,and stir until well blended.
  7. Drop mixture by heaping tablespoonfuls onto foil lined sheet.
  8. Bake 12 to 14 minutes in your already heated oven of 350 degrees until these beauties are nice and golden brown...cookies will be soft in center and set at their edges)
  9. Immediately slide foil with the cookies onto a wire rack,to which you will allow them to cool completely.
  10. Drizzle with 6 ounce package of semisweet chocolate chips,and 1 tablespoon oil that has been married,heated,stirred and melted together.

  12. When I made these today I thought of the time when we were kids,and he lured me outside in the winter with the pretense of building a snowman,he reaches down,picks a pebble from under the snow in the driveway...and,with the strength of Hercules,encasing said stone in a handful of freshly fallen white molecules,melting it down by the heat of the hand into one solid,round projectile of ICE.
  13. With a grin I will never forget he hurls it with the velocity and accuracy of a Major League Pitcher towards me.
  14. Dropping face down into that blanket of white,raising seconds later,spitting out a mouth full of snow...as I hear a...WHOP!
  15. Standing just above me was 'DAD'...the recipient of said missile.I turn and look at my Brother with eyes as big as saucers.
  16. All I could think of was Saint Peter all set to call his name,when to both of our surprise...Dad coughed,and sputtered, Dang,Son,if you throw like that next season they better look out! ...SAVED FOR ANOTHER DAY!
